Here at my house we love pumpkin chocolate chip cookies — especially when the weather is crisp and the leaves are falling outside. This time of year I’m always looking for cans of pumpkin in my cupboards to whip something up. The other day I found a pumpkin pie mix, so I decided that instead of making pumpkin chocolate chip cookies I’d make a fall pumpkin pie with a chocolate ganache layer on top.
As I was looking for some instructions for making chocolate ganache, I found this awesome site. Ganache is super easy to make; I had no idea! The site also gives directions to use ganache for different types of desserts. Here in this recipe we’ll be pouring it over the pumpkin pie like a ganache top layer.
First I baked my pie and followed the directions on the Libby’s Pumpkin: Easy Pumpkin Pie Mix , 30 Oz can, and let it cool for about 2 hours. You could probably be fancy and make your own out of homemade pumpkin puree, but here in our house we like to make things easy on ourselves.
For the chocolate ganache, I used 8oz of Hershey’s: Semi-Sweet Chocolate Chips, which I think worked for me, but if I were serving this at a party I might use nicer chocolate like this. But for my first time making ganache, I think it was fine.
I then poured the chocolate ganache over the pie in a circular motion, starting from the center and working towards the outsides. It should look really glassy and smooth. I then let it sit for and hour, and then moved it to the fridge overnight.
And there you go! A fall pumpkin pie with a chocolate ganache layer!
