I seriously love chicken salad, but sometimes all the mayo makes me want to gag. Does anyone else feel the same? My husband refuses to eat chicken salad for the same reason. He hates mayo, and I mean he hates it. In an attempt to change his mind about chicken salad (cause I firmly believe that I can change his mind on a lot of foods) I came up with a healthy substitute for the mayo. Greek yogurt is a great substitute to use in recipes. You can substitute it for heavy whipping cream, or even for butter. It is healthier and protein packed, so I’m all for it.
In my recipe, I happened to use a rotisserie chicken to make things a little easier on myself, and I highly recommend it. However, you are free to use any kind of grilled or cooked chicken breast; just keep in mind that you may need to add in a teaspoon of salt if you’re not using a rotisserie chicken.
I began by carving my rotisserie chicken, and pulling it into smaller pieces and set it aside in a medium sized mixing bowl. Then I cut up the celery, apple, red onion, and almonds the ingredients and combined them into the mixing bowl with the craisins. Next, I sprinkled the lemon juice over the contents, and mixed in the container of Chobani Plain Greek Yogurt. I finished with sprinkling in the pepper.
And there you have it! A delicious and healthy chobani chicken waldorf salad!

- 1 5.3oz container Chobani Plain Greek Yogurt
- 3 cups chopped and cooked chicken breast
- 1 cup celery
- 1 cup chopped red onion
- 1/2 cup craisins
- 1 apple diced
- 1/2 cup chopped almonds
- 2 teaspoons lemon juice
- 1 teaspoon ground pepper
- Chop chicken breast, celery, red onion, apple, and almonds. Combine into a medium sized mixing bowl with craisins.
- Sprinkle lemon juice over the contents, and add in your container of Chobani Plain Greek Yogurt. Mix together to coat all ingredients. Finish with a sprinkling of fresh ground pepper.
