Happy 24th of July! Here in Utah the 24th of July is almost as big as the 4th, because it marks the day that the Mormon Pioneers came into the Salt Lake Valley. So, basically, July in Utah is full of fireworks and BBQ’s, and it’s awesome.
Today I’m sharing a recipe for pork and veggie souvlaki skewers that are perfect for a BBQ, or a hot summer day. My husband and I have been trying to eat more veggies with every meal, so when I found this greek souvlaki recipe on Pinterest from the blog Figs & Feta, I thought it would be a perfect opportunity to add some zucchini and sweet peppers to the mix.
Since we are renters and we aren’t allowed to have a grill at our house, I actually broiled these (low broil) on a broiler pan in my oven. After marinating the meat and vegetables for about 4 hours, I assembled the skewers and broiled them for ten minutes on both sides. And there you go!
